fusion for late 2009 model?

My iMac/27"/2009 with 16G RAM/3TBHD is getting slower. I also have a MacBook pro, little bit younger but with a SSD 1TB, still flying not a moment of hesitation.

Could I replace the HD in my iMac with an SSD drive / of fusion drive? Anybody done that before?

Technically yes, you could do it but you would need to manually enter all the Unix commands after installing a small SSD. You may want to consider replacing your HD with a SSD and using the internal HD as just a storage drive. OWC (www.macsales.com) has install video that shows how to do this using a data doubler. The downside is you lose your SuperDrive. The video is located by clicking here
