We've just bought apple TV In Spain
Is it possible to watch the usual UK TV BBC ITV etc?

That depends on what apps are available on the Spanish app store for Apple TV. I'm not sure how many participants here would be in a position to answer that, you may want to go and see for yourself by visiting an Apple Store if it's not to far away.
