New versions of songs automatically downloaded

iTunes is automatically changing versions of songs I already purchased. Sometimes these versions are drastically different from the original versions of the songs. How can I stop this and (hopefully) restore the original versions of these songs?

Do you have either iTunes Match or Apple Music enabled?

If the audio data has changed are you looking at a downloaded track or a stream?

Do you have a backup of the library and the media or any devices that hold the original content?
