Apple TV causes TV audio out to change

I have an LG TV with HDMI-CEC. This means I've been able to use the LG remote to control my Sony soundbar's volume in the past, and now the Apple TV 4 remote to turn the TV on and control the volume on the soundbar. However, since I've attached the Apple TV, I've found that occasionally, seemingly randomly, when I turn on the TV it will have changed the audio output from Optical out to TV Speakers. I can't figure out what would be causing this other than the Apple TV since it never happened before I hooked up the Apple TV.

Any ideas why this might be happening?
