Question;

I sent a imessage text

my phone shows the other person typing a response

Can I only see their response to me, or do I see them responding or sending a message to another person?

When you send an iMessage to someone you see the typing indication bubble, that bubble is only displayed to you when they are physically typing a reply in the message thread between you two. It doesn't indicate that they are typing to someone else.
