It sounds like you're having an issue, when sharing Notes from your iPad mini, you're unable to share the entire Note. One thing you want to make sure of is that you aren't just looking at the photo in the note, but that you're viewing the note itself. Once there, you should be able to share the entire note, by following the instructions from the online iPad User Guide:

Share or print a note. Tap at the top of the note. For more information about sharing, see Share from apps. For more information about printing, see AirPrint.

If you continue to see issues with sharing the note, you may want to follow the initial recommendations in the following article:

Restart the app

Close the app and open it again.

Restart your device

Turn your device off and back on.

Check for iOS and app updates

Make sure that you're using latest version of iOS.
