App data recovery

Does anyone know how to recover data from an app after a system restore? Any programmes/software you can recommend?
My iPod broke randomly today and itunes is insisting on a system restore, but I just need to get some recordings off the iTalk app before I do the restore.

iPod touch, iOS 9.2.1

That data should be in the backups the either iTunes or iCloud makes. Just restore form the last backup

For how to restore:

Use iTunes to restore your iPhone, iPad, or iPod to factory settings

To restore from backup see:

Restore your device from an iCloud or iTunes backup - Apple Support

If you restore from iCloud backup the apps will be automatically downloaded. If you restore from iTunes backup the apps and music have to be in the iTunes library since synced media like apps and music are not included in the backup of the iOS device that iTunes makes.

You can redownload most iTunes purchases by:

Downloading past purchases from the App Store, iBookstore, and iTunes Store

I'm afraid I haven't backed up in a while 😟 that's the problem - I need to kick our of recovery mode to access my app content for literally 5 minutes and then I can restore or do whatever apple wants me to do.. I tried Reiboot and RecBoot but it just stays on the "exit recovery mode" screen and does nothing.
I downloaded tinyumbrella but it doesn't see my device and hence is useless..
I'm so desperate to download the recordings from the iTalk app!
