I have all my photos on my IMac. How do I control that my wife wants only certain photos on her iPad and I want only my certain photos on my iPad? All of our Mac products are newer and running the most uptodate software.

If you sync your photos to your iPad using iTunes Photo Sync, you can select different albums to sync to the two iPads, see: Sync photos to your iPhone, iPad, and iPod touch in iTunes - Apple Support
iTunes Photo Sync is not available, if you are using iCloud Photo Library on your iPhone. If you want to use iCloud Photo Library, each of you would need to set up a different Photos Library to sync with iCloud for your own AppleID.
