I'm afraid of losing the battery's live from keeping my iphone in the charger all that time. So that means I can just download the software update on itunes first then plugging my phone to install it isn't that right?

You will not harm the battery by keeping it plugged in. I plug my phone in before I go to sleep and let it charge all night. The charging will automatically stop when it reaches 100%. You cannot over charge the battery. As Tonefox says, I would plug the phone into the computer and let it update overnight.
