Snow Leopard comes with iChat 5
Updates during Snow Leopard means it should end up at iChat 5.0.3
Generally one version of iChat will not work on the OS version below or above the one it came with.
It is also true that any Updates to the versions will not "Match" lower OS X versions.

Check the two drop downs after the Free Text area.
Upgrading - Snow Leopard to higher for example often moves some folders such as Saved Chats.
In later versions Pics and files sent in chats are held separately.
It becomes impossible to move them back when "downgrading".
iChat from version one through to iChat 6 can use AIM valid Names.
So can Messages in all versions (7, through both 8s and version 9 in El Capitan)
From version 3 iChat can do Jabber (GoogleTalk included.) through to El Capitan.
All version can do Bonjour (although this does tend to be 1-1 text chats on the LAN).
There is an issue with using the Audio Only chat and Video chat in all versions and this is to do with the SNATMAP server that handles connections between Buddies.
It will allow Bonjour versions and using two computers with different AIM Screen Names on the same LAN.
(As you call out it opens ports for the data coming back. It seems to only work if both ends are on the same LAN)
