If you just want to change the iPod's name in iTunes, because the iPod's name includes the previous owner's name, select the iPod in iTunes (click its device button on horizontal bar) to show the iPod's settings screen in iTunes window. Near upper left corner, where you see the small image of iPod, click the iPod's current name. The name becomes editable. Change it as desired, and press Return on keyboard.
However, since this iPod is new to you, you should do a Restore on it using iTunes, to give it a "fresh start." This erases the iPod, reinstalls its software, and sets it to default settings.
The iPod will then act like it just came out of the box when it was new, and you can set it up as your iPod syncing songs to it from your iTunes library.
You should state the actual problem ("iTunes doesn't recognize the iPod"). 🙂 The iPod's name is not related to the actual problem...
Try putting the iPod into Disk Mode.

If it goes into Disk Mode, run iTunes and connect it. If iTunes picks it up, it may prompt you to do a Restore with a message about "recovery." If you're OK with erasing the iPod, tell iTunes to proceed with the Restore. After the Restore completes, you can set it up as your "new" iPod.
If that does not work, please post back. Is your computer running iTunes a Mac or Windows PC? If Windows, what version.
