sorry there isn't much that you can do, it's the cycle that happens to all devices there internal components are not compatible with the latest software like there processor, even if you could install the latest ios on your ipod it would be slow and laggy at anything and you would wish that you had never had upgraded to the latest software, apple do it for the better of you. I had the same problem with the first ipod touch that was released, I would suggest buying a second hand ipod at least the 5th generation since they can run the latest ios and are super fast and snappy at everything.

Starting when iOS 7 was released, Apple now allows downloading the last compatible version of some apps (iOS 4.2.1 and later only)
Install the latest compatible version of an app on an earlier version of iOS or OS X
App Store: Downloading Older Versions of Apps
You first have to download the non-compatible version on your computer. Then when you try to purchase the version on your iPod you will be offered a compatible version if one exists.
