Q: When I went to not use Icloud DRive with only Icloud, said all my documents will be removed from this PC,  what is that all about?

Do not want Icloud DRIVE, just Icloud, but when I unchecked Icloud Drive it said it would remove all my documents from this PC. What is that all about??
Using Windows 7.  BIG mistake to trust Apple, I guess.  Why would all my Documents be removed?

See the following from Set up and use iCloud for Windows - Apple Support

When you turn on iCloud Drive, iCloud for Windows creates an iCloud Drive folder in File Explorer. Any documents that you've stored in iCloud will automatically download to the iCloud Drive folder in File Explorer. Files that you create on your PC and save to this folder will automatically appear on your other devices.

I haven't used iCloud Drive on a Windows computer but I suspect that the message is indicating that folder and its contents (i.e., the local copy of your iCloud Drive files) will be deleted from your computer when you turn off iCloud Drive. You could use Windows File Explorer and copy the files to another folder before turning it off. The following refers to a Mac but may be similar for Windows: OS X El Capitan: If you turn off iCloud Drive on your Mac
