Select the Omega symbol, and press command+E. Then, follow that with command+F (Find/Replace). The Omega symbol will already be in the Find text area and should show you a found count. Assuming that the found count is 1, and with the Replace field blank, just choose Replace all, and the Omega symbol will be removed. Tested with a gray shape background with an inserted Omega symbol — Pages v5.6.1 on OS X 10.11.3.
