There is no command to export to MP3. You can convert songs using iTunes to create MP3 versions, which are added to your iTunes library. You can then copy them to the USB flash drive. Here's one way you can do it...

First, go to iTunes preferences General pane. Click Import Settings. Set Import Using to MP3 Encoder. Set Setting to desired sound quality (higher kbps means larger song files). Click OK (to set conversion format).

For the next step, it may be easier to create a new playlist in your iTunes library, and add all songs you want for your car to playlist. After you finish adding songs, select this Car Songs playlist, click any song on list, then Select All (from Edit menu OR Cmd-A on keyboard). With all songs on playlist selected, from the menu bar, File -> Create New Version -> Create MP3 Version. iTunes converts selected songs to MP3 format and adds the MP3 version of songs to iTunes library.

NOTE: You now have a second copy of these songs in your iTunes Library. Also, if you have older purchased songs from iTunes Store (from before early 2009), they may use DRM (copy protection). The DRM prevents conversion for those songs.

To easily find these converted songs, sort your iTunes music library by the Date Added column, so that the most recently added songs appear at the bottom of list. All newly converted MP3 songs should be there, listed together. Create another new playlist called Car Song MP3. Select all converted songs at once, and add them to the Car Songs MP3 playlist.

Go to the Car Songs MP3 playlist. You may want do a Select All on the list, right-click selection, and Uncheck Selection for these duplicated songs, if you use the song checkmarks for things like syncing songs to iPod and iPhone. To copy the MP3 songs files to the USB flash drive, do a Select All on the list. Show the USB flash drive in a Finder window (or on Desktop). Drag the song selection from iTunes window to Finder window, and drop on the USB flash drive. The song files are copied to the USB flash drive.
