I originally set up my wife's iPad under my Apple ID. I need to change the settings to her Apple ID. I am concerned about losing her Facebook and email information. How can I ensure that this information is retained for her?

Use Family Sharing for Facebook and other apps that she purchased using your ID.

As for email, that has nothing to do with your Apple ID unless she is using your iCloud email account. Email is tied to the email service provider, not to the device. She should be able to get email on any computer, tablet, iPhone .... Anywhere that she can sign into her web mail server. If she signs out of your ID or if she signs into her own ID, that should not affect anything in her mail app email accounts.
