iPhone does not monitor Stand goal progress (or transfer it to the Activity app on Apple Watch). There is presently no way to retrospectively gain credit for the hours during which you were not wearing your watch.
Health and fitness data (eg steps) recorded by Apple Watch, iPhone and other sources is aggregated by the Health app on your iPhone. Combined data is reflected in the Health app Dashboard, which also adjusts results to avoid any double counting of data from different sources.
