I have this question too. But when I changed my email and password of my Apple ID, my iCloud is still signed in with my previous Apple ID email. Now when I tap on "sign out", it brings up the previous email and needs the password to sign out, and whether I insert the new password or the old one, it does not accept neither of them and says there is no apple ID available with the previous email. So I cannot sign out from icould to sign in with my new apple ID email, nor my icloud works, since the name and email address of previous email and all icloud options are Gray Out.

Please assist me in this way.
