I bouth new ipad air. How i remove demo ios and set normal ios? I don't have restore button. Thanks

If you got it from a store, than it should already be running the "full" version of iOS. If you actually do have the store demo of iOS, than it's impossible to upgrade, as they are supposed to be demo iPads.
Can i install a new app from i tunes. This is new ipad with some photos, music... I can not remove this. Why?

You should be able to restore it as new using iTunes on your computer. I've done it. Yes, the iPad does have the full version of iOS on it. It just has some additional software that prevents access to some features.
If the iPad is not locked or password protected you can try this:
Go to Settings > General > Reset > Erase All Content and Settings. This will restore your iPad to factory condition.
If is password protected you should go back where you got it and ask them to unlock it.

An iOS device in demo mode does not have a Reset menu under General. You have to do the restore through iTunes.
IF it was in demo mode when you got it the iPad was not new, and may have been stolen. New iOS devices are never loaded with the demo version. Return it.
