They are simply responding to the original message on their device and the whole group gets it, even though that person is not getting the messages from you because you deleted them from your device's group. You cannot remove that original message from their devices. You can start a new group chat with out them and see if the group agrees it is better they be left out and start a new group chat. You can also block their text messages if you don't mind never hearing from them again. But they will still see messages sent to the original chat they are a part of if any one person leaves them as undeleted from the message and responds to the original group text.

In Messages on a Mac the AIM, Jabber and Yahoo accounts can also do Group Chats as well as the iMessages one.
I have never had a Yahoo group chat so I can't speak about that.
AIM ones have block list so you could block someone.
Jabber Servers vary as to whether they allow Group chats as you tend to have to go through a particular server lined to the main one.
However I have never come across a blocking mechanism.
The Bonjour account does not do Group Chats.
The iMessages Account on a Mac cannot remove anyone.
It is also not entirely clear what happens when only one persons blocks someone.
You can also block someone from an iPhone which will normally sync across to your Mac Contacts' list.
You also have the option to Leave a Chat on the iPhone.
The best suggestion has already been made - in starting a new group chat.
