How do I do this??
Would I map a button to the Playback/Transport/Play-Stop(from Start)
and then add another mapping to the same button(for the same playback track),
this time mapping it to Playback/Synchronization/Sync,
and then choose "Off" in all of the drop-down menus?

Just turn off Sync in the Playback plugin for those backing tracks that contain tempo changes
You may want to have a screen control mapped to the Playback Start/Stop button.

Well, maybe you could try loading up a file that has tempo changes, ignore the alert and see what happens
