How can I revert to the original notes app?

I don't know how, but the Notes app on my iMac got upgraded to the new version and formats. How do I revert to the old version? I have no intention of upgrading my iPhone past 8.3 because the new Music app is horrific for those of us not subscribing to the streaming service. Unfortunately, now my Notes won't sync.

Any ideas?
