Actually dpi is meaningless unless a print size is set. The same image can be printed at different dpi's depending on the size of the print. This site describes it in more detail: The Myth of DPI.
Actually clients should specify minimum pixel dimensions rather than a dpi. One could provide a 640 x 480 pixel image at 300 dpi and satisfy the 300 dpi specification and not have a very useful image file.
You can open the exported image with the 3rd party editor of your choice that can reset the dpi to 300 without having to do any editing and save it.

In Aperture you can set the dpi in the export preset, when you export your photos. Have you checked, if the export preset you are using has changed?
To check the export preset, select "Edit" in the Export panel instead of "JPEG original size" or similar and check the dpi values you are seeing there.
Correct them if necessary.

I have tried that and even recreated the preset for full size Jpegs and 50% again but to no avail? Still defaults to 72 yet is OK for Tiffs
I don't know how or why it changed, I just noticed it one day when I was editing a file for a client!!
I was wondering if their is an Import setting that is importing as 72 but that's not something I can find to check.
