Go > Connect to server - what determines list of volumes/shares?

I'm using 10.8.5 due to some critical applications that may not survive upgrading to a new MacOS.

I'm using Finder Go > Connect To Server … to a 10.6.8 Mac Server. After I successful log in, I am presented with a list of volumes/shared folders/??? on the target server.

I don't know what determines which items are shown in that list. To that list I would like to add a folder on the target server, but I can't make the folder shared to Everyone. I don't mind doing things on the command line if that's what it takes.
