I have an iMac 27" (mid 2011) and would like to attach 2 thunderbolt displays to have a total of 3 screens. Will this setup be supported by my iMac?

Yes, two Thunderbolt displays will work.

There is no way to connect a cable box to a Thunderbolt display, but you could connect the cable box to the computer with a video input unit and have the video displayed on any display.

Blackmagic makes a Thunderbolt video input unit.

To use HDMI you will need to removes HDCP. Some HDMI splitters will remove it.

Elgato game recorders may also work.
