It sounds like you have two issues here. One is that when you tap the camera button to select photos to send, the photo thumbnails don't load or show at all. And two is that you need to know how to share multiple images from the Photos app at the same time.
For the first issue I would quit the Camera and the Photos apps:
1. Press the Home button two times quickly. You'll see small previews of your recently used apps.
2. Swipe left to find the app you want to close.
3. Swipe up on the app's preview to close it.
When you have done that restart the device and test the issue again:iOS: Turning off and on (restarting) and resetting
If the issue persists, backup your device to iTunes, then restore it as new and verify that it works.
How to erase your iOS device and then set it up as a new device or restore it from backups
If it does, then restore your backup to either verify it still works and the software just needed reinstalled, or isolate the issue to the backup file itself.
Now as far as sharing images from the Photos app you should be able to scroll through the photo thumbnails when you tap the share button and tap on the ones you want to share:

Mar 28, 2016 10:13 AM in response to sterling rby PrizePopple,Can't send pictures via text or Hangouts. When I plugged my phone in to my Mac Mini it auto-open Photos and it showed as having no photos. In iTunes it's now showing I have 5 GB of free space and no photos, and I assure you I do not.
I already restarted my phone.
I also tried sharing a picture directly from the Photos app to Messages, and that also did not work.
Now for some reason upon disconnecting my phone from my Mac Mini it now shows all my pictures in Photos on my desktop. The issue of being unable to send any photos, and it showing that I have none when my phone is connected to my desktop, still stands.
