I fear seeing an iOS update. Every time i try to update my iphones ios through itunes, i come back only to see that dreaded itunes logo with a cable on the screen. And it's stuck there. only way to do it is to wipe it clean and restore from backup. this has happened with at least the last 3 ios updates. Why is it doing this?

I have the same problem with my iPhone 6 Plus. I tried updating through iTunes last night, and got the same issue as you did. This is really annoying. And for some reason, my Mac isn't recognizing my iPhone anymore so I can't restore the **** thing.
The 9.3 update has been having some issues - if possible best to wait a little before updating
