Q: how to select fast draft when printing through bonjour on windows to HP pronter on macbook. My only options are printer default and best

how do I  select fast draft when printing through bonjour on windows VISTA to a HP printer on macbook El Capitan. My only options from windows printer preferences paper/quality are best and printer default. Also, it is not honoring my selection of print in Grayscale. It always prints in color. Thanks
