i am getting a new IPad Pro this Thursday. What is the best way to backup, using ICloud or Itunes. I want to backup contacts, bookmarks, photographis and everything else from my old IPad.

You can do both.
I personally do using local iTunes backups.

The best way is to look and make the comparisons. I backup with iTunes, but that requires you to connect the device to the computer with a cable. When you get the new device, you would need to wait until you get back home to connect and restore. What they backup can differ slightly as well.

I have always preferred iTunes. I feel more confident of having an exact replica of my previous device using that method.
Realizing of course, that if you are also using iCloud for all of the features that it offers, there is very little difference. A local copy is always more complete and accessible IMHO.
