How do I read the heart rate data recorded by the Apple Watch?

my wife wears an Apple Watch and suffers from irregular blackouts. After the last one, I checked the data through the health app and saw that around the time of the blackout, there appeared to be no data recorded. A heart rate range was recorded around the time before and after the blackout. Can someone explain how the data recording works? Thanks,

Thanks but it happened again today. I got a call from her while I was returning home from a workout. She said she had fallen and needed help getting up. Fortunately, our boarder was at home and could do that. When I got home, the first thing I did was look at her heart rate via the health app on her iPhone. Sure enough, it appeared that no data had been recorded when she fell. I'm beginning to suspect that this is not a coincidence but I need someone to help me understand what else that may mean.
