Song and Artwork Issue

I connected my iPod touch (6th Generation 128g) to my iTunes to add music and when I disconnected after it synced the album artwork for some songs/artists disappeared from my iPod. When I connected my iPod to fix the issue it shows up as normal under On My Device but when I disconnect it the songs/artists once again are missing. The majority of my music is on an external hard drive and not my iTunes Library because I had to factory reset my Mac a few months ago, I'm trying to find a way to have my iPod and On My Device show the same thing without having to complete reset my iPod or have to import my 4,000 songs back into my Library. Any help would be greatly appreciated because I am at a loss for how to fix this and I haven't been able to find a similar case online.

What I'm saying is that the artwork and songs appear to be on my iPod but only show up like they're on my iPod when it's connected to my iTunes, but once it's disconnected the artwork and songs disappear. So is it a problem with my iPod or my iTunes? I have repeatedly deleted the song and or artwork, tried renaming the entire Artist list and then naming it back but none of that has worked. I'm trying to avoid a factory reset of my iPod because then I would have to manually go through thousands of songs as I add them to my iTunes to make sure the artist, artwork and track number are right, I'm trying keep that as my last and only option.
