I preview my book from iBook Author and it has just starting to keep a cover from a week ago - a book I have deleted already. This now happens to all the previews even though the content is correct. How do I change this?

Isn't iBooks Author only available for Macs? So there is no iBooks Author for iPads.
I create the book on my Mac then preview it to my iPad. This problem has only started to happen in the last week.
Are you sure you have the latest version of the book on your iPad and not an old version?
Yes double checked that. I create my book in iBook author, press Preview with iBooks on iPad open then it appears on my iPad but with the wrong title page - one I created on 29th March 2016.

I realise that it is since I downloaded the new iBooks author!
Have you enabled the iCloud Drive integration in iBooks?

Maybe you restart your Mac and your iPad. Maybe there is some caching problem.
'previews' are just rough PDF versions of your real book.
Export an ibooks file and check there, instead.
I seem to have the same problem. When I preview on the Mac, the cover is the correct one. When I preview on my iPhone, or export it and download it on my iPhone, it is the default cover from my template (ePub Classic).
Any thoughts on how to fix this?
