Download El Capitan and make a USB installer.
Boot from the USB installer and Install.

I even did a clean install on a 64 GB Lexar jump drive to see how much I liked El Cap and I also have been practicing bringing files and some apps (up to date for El Cap) on to this Jump Drive and running it. But this link you sent me had great photos with the descriptions on doing a clean install whereas some other articles I found confusing because they described dual methods
