Try Settings->General and select "None" from the Recent items dropdown menu.
Not sure if that helps tho
Are you talking about the Application folder in the Dock? If so, just set it to display in some other order or view type. Just right-click on the icon in the Dock and you can change the viewing options. Otherwise, please describe in more detail what you are wanting to remove.

That's not what the person was describing. When you right-click on an app's icon in your Dock, in some instances you will see a menu of recently opened files. What this individual wants to know is how to remove that. They weren't talking about going up to  --> Recent Items. That's not in the Dock, that's in the menu bar.
To my knowledge, it can't be done.

If that is the case, then I would try clearing the Recent Items in the App itself.
As it turns out, that won't work either. There is also an issue with Recent Items actually being refreshed correctly in the Dock.
Thanks everyone for contemplating this. I have tried all of the above before I posted this. And indeed, the refresh function does not work particularly reliably. I deleted recents in the application (quicktime) but to no effect. It is not going to kill me if we do not find a solution. but it strikes me odd that there is nothing apparent that takes care of this. 🙂
FWIW, I consider it a "bug" in El Capitan which may be fixed in a future release.
I've been having this problem since El Capitan was released. Well, maybe calling it a "problem" is overstating it. It's a minor annoyance.
