OS X Server on Google Cloud Platform?
Has anyone (or is it even possible to) run an OSX Server instance in Google Cloud Platform/Google Compute Engine?
Appreciate to hear your thoughts.

Many of the functions of macOS Server are available on other platforms, Apple is offering iCloud for a number of features and for the integration with iOS and macOS devices, and — for those that require it — there are co-lo vendors around that do offer Mac hardware.
If you're looking for something specific that's provided by macOS with Server.app installed, somebody here might be able to provide an alternative.
The Apple software end-user license agreement (EULA) only permits OS X operations on Apple hardware, and Google is almost certainly not running Apple hardware here. So... no. If you want to host your own server, consider OwnCloud or some alternative running on UNIX, BSD or Linux, or select one of the hosting providers that offers Apple hardware such as MacMiniColo / MacStadium .
