1 - Not really, at least via website order They ship to store when available.
2 - from what you described it seems it is saying that the phone ships to the store on May 2.
I would call Apple a 1-800-MY-APPLE. They should be able to help/clarify
No, there is no option to do that normally and this is only available with new releases like when the iPhone 6 and 6s launched - you pre-order and rather than delivery you can select in store pick up, but you can't normally do this.
Why don't you just drive to your nearest Apple store at the end of April/beginning of May and buy the phones then instead?
