Does my iPhone SE need an "NFC SIM"?
I know my SE "works" with my old SIM, but do I need an NFC SIM for full functionality/better security?
(I have not yet used, or tried to use any "NFC FEATURES" yet)

No.
The iPhone SE supports NFC, therefore it is recommended to get an NFC nano sim.
The Secure Element is built into the iPhones hardware and therefore does not use a NFC Nano SIM.

No, iPhone SE already has a NFC chip built-in.

Not really.
While the iPhone does support and use NFC terminals. The hardware for it is already inside the iPhone itself. NFC features like Apple Pay will work without an NFC specific sim unlike some Android devices which do require an NFC specific chip.
Sim cards issued by carriers for iPhones are not NFC specific. Even AT&T acknowledges this fact.
While it probably will not hurt to have an NFC sim card, it will not enable any features not already supported by the iPhone natively.
