If backing up your iPhone using iTunes doesn't complete, be sure to try steps 1-2 and 4-6 in the following troubleshooting guide: If you can't make an iTunes backup of your iPhone, iPad, or iPod touch.

Resetting the lockdown folder (Reset the Lockdown folder in iTunes - Apple Support) seems to have done the trick.
