You may find that heart rate information is displayed more quickly when instead using the built-in Workout app.
As the developer of another third-party app has explained:
"Unfortunately the Strava app is not allowed to run in background which is why there is a delay in updating your stats when you raise your wrist."

I understand the point, it is the reason I expected to be.
But it does not solve the problem, because the Apple Watch green lights sensor is even slower.
Moreover, I'd like to use my preferred app.
So I think Apple should allow apps (that need to do it) to run in background to update data, at least every few seconds.
Even if this can have some drawbacks in battery usage, it would make Apple Sport Watch really a "sport watch"...
