If you set iTunes on the new Mac to sync the iPod, the iPod's previous content (from the old computer's iTunes library) has been erased and replaced with content from your current iTunes library.  Any songs on the iPod that are not in your current iTunes library are lost.  You get a warning when you try to set up syncing from an iTunes library that is not the one currently associated with that iPod.

NOTE:  For songs purchased from the iTunes Store, you can download previous purchases again at no cost from the iTunes Store Purchased screen

Download your past purchases - Apple Support

If you still have access to the old Windows PC, with its iTunes library intact, the best approach (even if your iPod was not erased) is to transfer your complete iTunes library from the old PC to the new Mac.  There are several ways to do this, including an automated approach (if your PC qualifies) to transfer your user data (including your iTunes data).

Move your data from a Windows PC to a Mac - Apple Support

You can also transfer just your iTunes data manually, using an external drive.  Transferring your complete lTunes library is much better than adding just your songs (and other content) to a new iTunes library on the Mac, because you get everything (including playlists, song ratings, play count, date added, etc.); it's the SAME iTunes library on the new Mac.  So, if you have access to your existing iTunes library on the old PC, please post back to get more info on HOW.
