How to use external extended monitors only

I have a macbook pro and 2 external monitors connected via a USB hub. The displays tab shows 3 displays and I do not want my laptop to show up as an extended display. How do I use only 2 external monitors with El Capitan on a MacBook pro from 2011?

Thank you for the quick and helpful response. The clamshell option had been working when I was using one monitor connected to thunderbolt and another with USB through a USB hub (the thunderbolt monitor did not display correctly so I bought another USB adapter). Now when I wake the MacBook Pro up from sleep mode, it always shows the third MacBook Pro monitor. It seems like clamshell mode no longer works with my current set-up. Is there a way to force clamshell mode?
