I want to buy a new MacBook pro, but the sizes /choices of the SSD units are very small and limited. I must choose between a 500Gb and a 1 Tb unit. The price of the 1 TB unit is very high an dthe 500Gb unit is too small. I am replacing a 17" MacBook pro with a 750 Gm Hdd..

Sorry I forgot the actual Question. Can one still upgrade the MBP later or is it a once off installation?
Well, your choice is to pay the additional US$500 for the 1TB SSD, or to change the way you work, and put some of your files on an external rotating drive or SSD drive.
These particular "stick" SSD drives are not yet "regular" technology, so there will be a premium for the fast drives with the interface required for these Macs.
You COULD upgrade the SSD later, but finding a fast drive with the correct interface has been very difficult until quite recently, and that means it costs rather a lot.
There is still a base-model 13 in that can upgrade, but anything with power (Retina units) cannot be upgraded. In Retina systems memory is soldered, and replacing the SSD *most likely* (I am not official Apple) voids the warranty.
