You need an iPhone 5 or later running the latest version of iOS to set up and use Apple Watch.
It cannot be paired or synced with any other iOS devices (including iPad), with any other Apple device (eg iPod touch, MacBook, etc) or with devices (eg smartphones, tablets) from any other manufacturer.

You need the connection regularly, once a day or so, to save the collected data to the iPhone and to make backups, or to update the watch software.Otherwise the Apple Watch is working fine without a connection to the iPhone. I rarely take my iPhone with me after the initial calibration of the watch, only when I think I may need the iPhone camera or the maps, and so the iPhone and the watch only meet at night, when I am charging them.
