Is there a way to set preferences to keep iTunes from breaking up Albums? I'd just like tracks/albums to be organized them *same* way they are prior to importing them into iTunes and don't have the time to go back and rename/label 100's of files.....I can believe apple makes this so difficult- Amazon's Music app makes this process seamless! Really Apple??!!

If I'm understanding you correctly you want to display your songs in Album format...iTunes is like a big database of your songs and can be displayed in multiple formats such as Title or Artist or Album, etc.
Go to your music and navigate to the top right and click on the down arrow that probably says "Songs" and change it to display your music in what ever format you want.
You can also go to "View" in the top menu and select "Column Browser" and select all sorts of display combinations.
