Family sharing
I am currently using my account to share photos and music the problem is she is getting all the apps and all my emails and stuff she doesn't want on her iPad. How do I keeps things separate between my iPad and hers.

I assume by "using my account to share photos and music" you mean you are sharing your Apple ID with your wife. Do not do this. Each person should have their own Apple ID. Use Family Sharing instead. These should get you started:
