With other versions of MacBook Pro/Retina I can use more than one external display at same time. I saw some guys connecting 3 external ones.
How many external displays can I connect to a MacBook 12"?

If u use an adapter with usb 3.0 interface you can plug in a usb 3.0 port replicator or simply a dock with display link technology.
Check if this dock has to interfaces for monitors, like the icy box has.
With this line-up of hardware you can use your MacBook and two additional monitors.
