To delete all music go to Settings>General>Usage>Storage>Manage Storage>Music>Tap edit in upper right and then tap the minus sign by All Music

I am having the same problem. I used to be able to just delete the songs by pressing the delete button/untick the songs but now I can't anymore. The tick boxes are greyed out and I cannot do anything with it. On the Music tab under On My Device option I also have the Edit Playlist option where I can drag songs into my iPod but I cannot delete the ones that are already in it. I have also tried to delete the songs using my iPod but they get copied right back in when I sync the device! It's very frustrating and I don't know how to get rid of my old songs. Please help.
