Q: How stable is Server 5.1 on El Capitan 10.11.4
I think it was Reid Bondonis who wrote that there are now first prices for being the first to update. Thus before taking the leap on one of the real servers at an office, are considering updating a spare mini (2012 16GB 1TB at present with Server 4 and Yosemite) to test-drive the process. Is Server 5.1 stable on 10.11.4 in your experience? and What steps besides the two independent backups, would you employ to effect this with the least glitches possible?

I find Server 5.1 on 10.11.4 to be very stable when set up from scratch. There are a variety of glitches when updating. Which services and how badly they are affected depends pretty much on "prior history". In other words, if you update from a Server 4/Yosemite installation which was previously set up from scratch, you probably won't see any major issues. If you update from a version which has already been update multiple times in the past, chances are that Mail and Web Services will fall over. While it is possible to get them going again, you may see some downtime.
On top of backups, I'd move aside /usr/local (if you have one) as the upgrade from 10.10 to 10.11 can take a very long time or fail altogether. Also, any 3rd party software you may have installed in SIP protected directories will be removed by the update.
