The behaviour that you describe may be caused by your watch losing contact with your skin, causing it to believe that it has been removed from your wrist. This would cause the Workout app to pause automatically.
A loose fitting band can trigger this by allowing your watch to lift from your wrist and/or by allowing clothing (for example, the end of a sleeve) to slip beneath the back of the watch.
During exercise, Apple Watch should be worn snugly on the top of your wrist. Apple suggests that you consider tightening your band before workouts and loosening it again afterwards. Better contact with your wrist may also improve heart rate sensor performance during your workout.

- At any time after starting a workout, press firmly on the display and tap on Lock.
- When you are ready to end the workout, press firmly again and first tap on Unlock.

Apple Watch uses an accelerometer to identify movement, so a minute's walk around with your arms swinging naturally should help to register this.
If you have already been doing this, but Stand progress is not being credited correctly, try these steps:
- On your iPhone in the Watch app, go to: My Watch > General > Wrist Detection - check that this is turned on.
- On your iPhone, in the Watch app, go to: My Watch > Privacy > Motion & Fitness - turn Fitness Tracking off (or turn it on, if it is currently turned off).
- Restart both devices by turning both off together, then restarting your iPhone first:
- To turn your iPhone off: press and hold the Sleep/Wake button until the red slider appears; drag it to turn off. To restart, press and hold the Sleep/Wake button.
- To turn your watch off: press and hold the side button until you see the Power Off slider; drag it to turn off. To turn it back on: press and hold the side button until you see the Apple logo.
- If you turned Fitness Tracking off in step 2, now return to the setting and re-enable it.

My Apple wacht doesn't work. Even when I tried resets.
I was reading your answers from time ago.
I put a passcode and it seems not working properly.
The watch thinks that I'm not wearing it.

Otherwise, given the steps that you have already tried, I suggest that you next contact Apple Support (mail-in service may be available) or make a Genius Bar reservation with a view to having your watch checked under warranty.
