Joystick - Flight-simulator

personally I use the windows version of the xbox360 wireless controller with my gaming on osx

Because as a company, it has chosen not to manufacturer one, leaving that to third party companies. Beyond that, no one here can provide you with any more information.

Since you have posted this in the iPhone accessories forum, I'm not aware of any joystick that is available to be connected to the iPhone. Then again, I'm not sure I would want to carry one around to play a game on my iPhone.

Apple doesn't need to "coordinate" anything. Standards for OS X and iOS for peripherals have already been published. It is up to those third party companies to build them to those standards and prove the apps or drivers needed to use them. If you have an issue with this, its is with the manufacturer of those peripherals, not Apple.
